I have been working in cheese for over 20 years. I wanted to develop a product that was different for South Caernarfon Creameries, so 4 years ago we came up with the idea of storing and maturing a bespoke cheddar recipe in the underground caverns. Although this maturation technique had been used before, this would be the first time it had been used in a slate mine in Wales. Allowing the cheddar to be stored and matured 500 feet underground for a minimum of 3 months at Llechwedd Slate Caverns has resulted in cheddar with a creamier consistency and added depth of flavour that I am delighted with.
